Ingredients for 4 servings:

  • 1 cup soft wheat semolina
  • 2 cups sugar
  • 5 cups water
  • 1 dashes rose water
  • 4 tbsp cream (kaymak)
  • 5 tbsp, heaped clarified butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

sweet Arabic breakfast semolina porridge

Heat 4 tablespoons of clarified butter in a saucepan. For four people, add 1 cup of semolina to the fat and stir until golden brown. Now add the water and sugar and stir well for 3 minutes until the consistency is pudding-like and not too runny. Remove from the heat, add a splash of rose water and 1 tablespoon of clarified butter, and stir to combine. The semolina pudding tastes best warm, but is often served cold. Ladle into bowls and top each with a large tablespoon of kaymak. Kaymak is available in Turkish supermarkets.
