Mandarin chocolate muffins

Ingredients for 1 servings:

  • 3 eggs
  • 150 g butter
  • 150 g sugar
  • ½ pack of baking powder
  • 90 g chocolate, chopped (cooking chocolate with approx. 40 – 50% cocoa content)
  • 90 g mandarin orange(s) from the can, chopped
  • ½ lemon(s), juice and grated peel
  • 100 g juice (mandarin orange juice) from the can, if necessary poured with water)
  • 250 g flour

Own creation

This muffin recipe was initially a makeshift solution, as I didn’t have many ingredients at home, but it was enthusiastically received. Luckily, I had written down the ingredients. Beat the eggs with sugar and butter until fluffy, then add the remaining ingredients and mix briefly with a mixer. Fill into muffin or silicone baking cups and bake at 180 degrees Celsius for 20-30 minutes. Instead of tangerines, you can use other canned fruits with the appropriate juice, such as pears, peaches, pineapples, cherries, etc. It is also possible to use fresh fruit, such as chopped pears or apples and pear or apple juice.
