Ingredients for 12 servings:

  • 275 g flour
  • 2 tsp baking powder
  • some baking soda
  • 2 tsp orange peel, grated, untreated
  • 5 tangerines
  • 150 g sugar
  • 1 egg(s)
  • 100 ml oil
  • 250 ml buttermilk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 175°C and line a muffin tin with paper baking cups. Combine the flour, baking powder, baking soda, and orange zest. In a second bowl, whisk the egg, oil, and buttermilk and stir into the flour mixture. Peel and finely chop the mandarin oranges, and fold them into the batter. Divide the batter evenly among the cups. Bake in the oven for about 20-25 minutes until golden brown.
