Mandarin yogurt muffins

Ingredients for 1 servings:

  • 1 small can/s of mandarin orange(s), preferably unsweetened
  • 3 eggs
  • 180 g butter, semi-skimmed
  • 180 g sugar
  • ½ packet of vanilla sugar
  • 125 g natural yogurt (0.1% fat)
  • 180 g flour
  • 1 ½ packets of baking powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

makes 12 pieces

Drain the mandarins. Preheat the oven to 180°C (fan). Beat the eggs until frothy. Then add the butter, sugar, vanilla sugar, and yogurt and mix until smooth. Sift the dry ingredients over the batter and stir in. Fill the muffin cups two-thirds full with batter and arrange two mandarin orange pieces on each, pressing down lightly. Bake the muffins for 20-25 minutes. The color shouldn’t be too dark.
