Mango Banana Jam

Ingredients
 

  • 500 g Fresh mango (weighed without peel and core)
  • 500 g Bananas weighed without their peel
  • 500 g Preserving sugar 2: 1
  • 2 tsp Lime juice

Instructions
 

  • Peel the mangoes (for me it is usually between 3 and 4, depending on the size) and bananas and cut into small pieces. The total amount of fruit must be 1 kg. Put the chopped fruit in a large saucepan and carefully mix with the preserving sugar and let everything steep for at least 30 minutes.
  • Then coarsely puree the sugared fruit with a hand blender so that there are still small pieces in it. Now bring the fruit mixture to the boil while stirring and then let it boil for about 4-5 minutes. It is best to put a lid on it, as it splatters a lot.
  • Fill the jam into jars while it is still hot, screw the lid on tightly and turn it upside down for a few minutes. Put the glasses back the right way up and let them cool down completely. Sufficient for approx. 3 jam jars.
