Mango – chili – ginger – jam

Ingredients for 1 servings:

  • 750 g mango(s), ripe
  • 250 g pineapple, fresh
  • 2 small chili peppers, dried
  • 1 piece(s) ginger, walnut-sized
  • 1 tbsp desiccated coconut
  • 500 g gelling sugar, 2:1
  • 1 vanilla pod(s), the pulp
  • 1 lemon(s), the juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Chop the mango, pineapple, chili, and ginger into small pieces and mix with the gelling sugar. Add the vanilla seeds and lemon juice. Bring everything to a boil for about 3 minutes, stirring frequently. Then puree everything, add the desiccated coconut, and stir. Immediately pour into hot, rinsed jars. Makes about 5 jars of jam.
