Mango chocolate cake

Ingredients for 1 servings:

  • 2 eggs
  • 125 g sugar
  • 2 small cans of mango(s), 250 g each, or fresh mango slices
  • 125 g margarine (half-fat margarine)
  • 1 pack of pudding powder (chocolate pudding)
  • 100 ml milk, 1.5% fat
  • ½ pack of baking powder
  • 210 g flour, can also be 1/3 wholemeal flour
  • e.g. bitter almond flavor, or amaretto liqueur
  • Powdered sugar, for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

low-fat and delicious

Line a springform pan with parchment paper and grease the sides. Cut the mango into small strips or pieces. Mix the first eight ingredients (except the fruit) into a batter. Pour the batter into the springform pan and arrange the mango strips on top, pressing them in lightly. Bake in a preheated oven at 180°C for about 40 minutes. Once cooled, sprinkle the cake with powdered sugar.
