Ingredients for 4 servings:
- 1 mango(s), ripe, approx. 400 g
- 250 ml sparkling wine
- 2 tsp lemon juice
- 75 g sugar
- 1 pack of gelatin, ground, white
- 250 ml cream
- 5 tbsp water, cold

Mix the gelatin with 5 tablespoons of cold water and let it stand for 10 minutes to swell. Peel and pit the mango, and puree the flesh in a blender. Then combine with sparkling wine, sugar, and lemon juice. Heat the swollen gelatin while stirring until dissolved. First, add 3 tablespoons of the mango mixture to the gelatin, then stir the gelatin-mango mixture into the remaining mango mixture and chill. Whip the cream until stiff. When the mixture thickens, fold in the whipped cream. Pour into serving glasses and chill.
