Mango Lassi Chia Pudding

Ingredients for 2 servings:

  • 1 large mango(s)
  • 150 ml coconut milk
  • 2 tbsp chia seeds
  • 1 tbsp desiccated coconut
  • 3 tbsp Greek yogurt
  • Bourbon vanilla flavor
  • Honey for sweetness

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the mango and cut into pieces. Combine all ingredients, except for a few mango pieces, in a blender and blend until smooth. Ladle the lassi into glasses and garnish with the reserved mango pieces. Drizzle with honey for sweetness, if desired. Refrigerate for at least 1 hour before serving, but preferably overnight, for example, for breakfast.
