the hit with fondue

Peel the ripe mango, remove the flesh from the pit, and dice it. Peel and finely chop the onion, then sauté in oil until translucent (do not let it brown). Add the mango pieces and 100 ml water and simmer over low heat until smooth. Season with curry, cayenne pepper, salt, and sugar, and let cool. Once the mango mixture has cooled, mix it with the mayonnaise. If you don’t make your own mayonnaise, don’t use the cheapest one; the difference in flavor is clearly noticeable! It’s been a hit with all fondues so far, but it’s also delicious as a spread with smoked turkey breast!
