Ingredients
- 150 g Melon fresh
- 150 g Galia melon
- 7 small Roma tomatoes
- 1 Spring onions fresh
- 1 Clove of garlic
- 10 Mint leaves
- 1 piece Chilli fresh
- 3 tablespoon Extra virgin olive oil
- 1 tablespoon Mango balsamic vinegar
- 1 pinch Brown sugar
- Salt and pepper
Instructions
- Core, peel and dice the mango and melon. Cut the spring onion (with the tuber) into slices. Cut the tomatoes into slices. Chop the mint, chilli and garlic. Mix these ingredients together.
- Whisk the olive oil with the balsamic vinegar and pour over the salad. Season the salad with salt, pepper and sugar.
- You can also replace the mint with rosemary, basil or coriander.
- There were red lentil balls with the salad.
