Mango-Rum Marinade

Ingredients for 1 servings:

  • 150 g mango chutney
  • 150 ml white rum
  • 1 stalk(s) lemongrass
  • 1 red chili pepper(s)
  • 1 piece(s) ginger, approx. thumb-sized
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • Lime(s), the juice
  • salt and pepper

Working time approx. 10 minutes; Total time approx. 10 minutes

Delicious barbecue marinade for meat and fish….

Lightly pound the lemongrass, then chop finely. Remove the core of the chili pepper and slice it into fine half rings. Peel the ginger and finely dice it. Mix everything with the remaining ingredients. Season with salt and pepper. Marinate the grilled meat (you can use the marinade for all types of meat, but also for fish; monkfish is especially recommended) for at least 2 hours. If using a charcoal grill, wrap the grill in aluminum foil, as otherwise the rum will drip into the embers and catch fire.
