Ingredients for 1 servings:
- 225 g flour
- 1 egg(s)
- 75 g sugar
- 1 tbsp vanilla sugar, some salt
- 150 g butter or margarine
- 800 g apples
- 1 lemon(s), juice
- 3 tbsp sugar (45 g)
- 1 tsp cinnamon
- 3 egg yolks
- 100 g sugar
- 100 g almond(s), ground
- 180 g cream (= 12 tbsp)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Place flour on a work surface and make a well in the center. Crack in the egg. Sprinkle with sugar, vanilla sugar, and salt. Place small pieces of butter or margarine around the edge. Quickly knead into a shortcrust pastry, cover, and let rest in the refrigerator for 30 minutes. Peel and core the apples, and cut into approximately 3 mm thick slices. Drizzle with lemon juice. Mix the sugar and cinnamon in a small bowl. Press the dough into a well-greased springform pan and form a rim. Arrange apple slices in a layered pattern on the dough and sprinkle with sugar and cinnamon. Place the pan on the middle rack of the preheated oven. Bake for 25 minutes at gas mark 5, or 220°C for electric ovens. Meanwhile, beat the egg yolks and sugar in a bowl until frothy. Loosely mix in the ground almonds and cream. Remove the cake from the oven and pour over the cream mixture. Return to the oven and bake at the same temperature for another 20 minutes. Remove from the oven and let cool on a wire rack.
