Maple syrup muffins with oat crumbles

Ingredients for 1 servings:

  • 300 g flour
  • 50 g sugar
  • 2 tsp, heaped baking powder
  • 1 pinch of salt
  • ¼ tsp cinnamon
  • 1 egg(s)
  • 150 ml milk
  • 100 ml maple syrup
  • 50 g butter, melted
  • 150 g berries or fruit of your choice, chopped (a little more is fine)
  • 20 g butter, melted
  • 2 tbsp oat flakes, fine
  • 20 g sugar
  • 1 pinch of cinnamon (or more if desired)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with blueberries, raspberries or chopped fruit of your choice

Mix the dry ingredients in a bowl. In another bowl, whisk together the egg, milk, maple syrup, and butter. Add the flour mixture to the egg/milk mixture and mix with a ladle until moistened. Then fold in the berries. Divide the batter among the 12 baking cups, spread the mixed crumb mixture over the top, and place in the preheated oven. Bake at 170°C for about 20 to 25 minutes. Do the toothpick test. This makes enough for 12 cakes. Tip: You can sprinkle powdered sugar on top or make a maple syrup and powdered sugar glaze.
