Marble muffins

Ingredients for 1 servings:

  • 150 g flour
  • 3 tsp baking powder
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 4 eggs
  • 3 drops butter-vanilla flavoring
  • 5 drops of rum flavoring
  • 150 g margarine (or very soft butter)
  • 1 tbsp cocoa powder, heavily heaped
  • 2 tbsp milk
  • ¼ jar jam (strawberry jam)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 180°C top/bottom heat (160°C fan/convection oven). Sift the flour and baking powder into a bowl. Melt the margarine. In a mixing bowl, beat the eggs with the vanilla sugar and sugar until frothy, then add the melted margarine and flavorings. Stir in the flour a tablespoon at a time and mix everything well. Spoon half of the batter into 12 muffin tins. Sift the cocoa powder and add it to the remaining batter along with the milk, and mix. Place the dark batter on top of the light batter. Lightly prick with a fork to create the marbled pattern. Bake the muffins for 20 minutes. Spread some strawberry jam on the still-hot muffins.
