Ingredients for 4 servings:

  • 1 zucchini
  • 1 red bell pepper(s)
  • 3 garlic cloves
  • 3 spring onions
  • 500 g mushrooms
  • Salt, coarse
  • Pepper, ground
  • olive oil

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cut the zucchini into 0.5 cm thick slices. Lightly brush the mushrooms and remove the stem ends. Cut the spring onions diagonally into approximately 3 cm long pieces. Leave the garlic cloves whole; if you don’t want any, don’t use them. Remove the pepper seeds and stems, etc., and cut into bite-sized pieces. Place the vegetables in a roasting pan, sprinkle with salt, and drizzle with approximately 3 tablespoons of olive oil, then mix well. Place the roasting pan in a cold oven on the first shelf from the bottom at 180°C and cook for approximately 30 minutes (depending on how firm you want it). Stir occasionally during cooking. I also add a tablespoon of lamb seasoning (available from Turkish grocers); it gives it a wonderful flavor and a bit of spiciness. You could also add black olives. Goes very well with grilled food.
