Marinated chicken breast on vegetables

Ingredients for 4 servings:

  • 4 chicken fillets
  • 5 tbsp soy sauce
  • 100 ml white wine, dry
  • 1 garlic clove(s)
  • 1 piece(s) ginger, approx. walnut-sized
  • ½ tsp sambal oelek or a small dried chili pepper
  • 1 tbsp sesame oil
  • 2 bell peppers, red
  • 2 stalk(s) leeks
  • 300 g mushrooms, small
  • 2 tbsp oil, neutral
  • 1 tbsp cashew nuts, chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

with Asian-inspired marinade

For the marinade, combine soy sauce, wine, garlic, ginger, sambal, and sesame oil. Marinate the meat in it for 1 hour in the refrigerator. Remove and pat dry. Reserve the marinade. Fry the meat in 1 tablespoon of oil over medium heat for 15 minutes, turning regularly. Let rest in the foil for another 10 minutes. Meanwhile, cut the vegetables into thin strips and fry in the remaining oil for 1 minute. Pour in the marinade, bring to a boil, and season with salt and pepper. Arrange the vegetables and meat on a platter with the sauce. Toast the nuts without adding any additional fat and sprinkle over the meat. My daughter said this was the most delicious meal ever!
