Marinated garlic chicken

Ingredients for 2 servings:

  • 2 chicken thighs
  • 1 lemon(s)
  • 5 tbsp extra virgin olive oil
  • 4 garlic cloves, grated
  • 5 sage leaves
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 1 hour; Total time approx. 7 hours 10 minutes

Squeeze the lemon. If using an organic lemon, zest it first, let it dry, and then reserve it for another purpose. Mix the lemon juice with olive oil, grated garlic cloves, chopped sage leaves, and a pinch of salt and pepper to make a marinade. Pat the chicken thighs dry and place them in a sealable dish. Pour the marinade over them. Rub a little of the marinade into the meat. Seal the dish and let the meat marinate in the refrigerator for about 4-5 hours. Preheat the oven to 200°C (top/bottom heat). Place the thighs in a shallow baking dish and roast on the middle rack of the preheated oven until crispy, about 45 minutes to 1 hour, depending on the thickness of the thighs.
