Marinated Green Asparagus

The perfect marinated green asparagus recipe with a picture and simple step-by-step instructions.

  • 1500 g Asparagus green fresh
  • 0,5 dl Extra virgin olive oil
  • 2 tbsp Balsamic vinegar old
  • 2 tbsp Bianco balsamic vinegar
  • 1 Pc. Red onion, finely diced
  • 3 Pc. Chopped garlic
  • 1 Pc. Chilli red freshly chopped
  • 1 tbsp Mild mustard
  • 2 tbsp Asparagus stock
  • 4 Stalk Parsley smoothly finely chopped
  • 1 Handful Wild garlic leaves finely cut into strips
  • 1 tbsp Pumpkin seed oil

The day before :

  1. Wash and peel the asparagus, cut off the woody ends. Arrange flat in a steamer tray, place in the steamer, cook with steam for 12-13 minutes. They have to be crisp. Put the asparagus peels and ends in a saucepan, cover with water, season with a little salt, pepper and a pinch of sugar, bring to the boil, simmer for 10-15 minutes, strain. Put unused asparagus stock aside and use it for other purposes.

In the meantime :

  1. Emulsify the oil, vinegar and asparagus stock. Add the mustard, onions, garlic, chilli and parsley, mix well together. Season the asparagus with salt and pepper. Pour the dressing over it, cover and chill.

The next day :

  1. Take out of the fridge in 1-11 / 2 hours, sprinkle with the wild garlic, cover again until service.
