Ingredients for 4 servings:

  • 3 cups buttermilk
  • 3 packs of herring fillet(s)
  • 2 small onions
  • 5 small gherkins
  • 1 apple
  • some mustard seeds
  • some peppercorns
  • 1 large bay leaf
  • n. B. Dill

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

Drain the herring and let it simmer in cold water, covered, for half an hour. Discard the water and cut the fish into bite-sized pieces. Slice the onion into half rings. Dice the apple and cucumber. Place everything in a bowl, add the spices, and pour in the buttermilk. Stir and let it simmer in the refrigerator for at least one night. We always serve this with boiled potatoes.
