Matjes in cream sauce

Ingredients for 4 servings:

  • 2 packs of matjes fillet(s), (in oil) shrink-wrapped
  • 3 large onions
  • 1 cup of sweet cream
  • 500 g buttermilk
  • 1 pinch of pepper, freshly ground

Working time approx. 10 minutes; Rest time approx. 10 hours; Total time approx. 10 hours 10 minutes

quick to make, but prepare the day before

First, peel and slice the onions for onion rings. Then remove the herring fillets from the packaging and pat them dry with kitchen paper. Layer the onion rings and herring fillets alternately in a lidded bowl. Then pour all the buttermilk over them, along with the cup of cream. Gently mix the two liquids a little with a fork. Finally, sprinkle freshly ground pepper over the liquid. Don’t stir again! Cover and refrigerate until the next lunchtime. Serve with freshly boiled potatoes.
