Ingredients for 4 servings:
- 400g mozzarella
- 1 tbsp pink pepper
- 2 cloves garlic
- 4 tbsp vinegar (white wine vinegar)
- 6 tbsp olive oil
- 1 tsp thyme, fresh
- 1 tsp oregano, fresh
- ½ cucumber(s)
- 1 head of radicchio, small
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Drain the mozzarella and cut into cubes approximately ½ cm long. For the marinade, coarsely crush the pink peppercorns and press the garlic. Mix the pepper and garlic with the vinegar, oil, thyme, and oregano and pour over the mozzarella cubes. Let it sit for 15 minutes, turning carefully several times. In the meantime, peel, halve, and deseed the cucumber. Cut the flesh into cubes the same size as the mozzarella cubes and mix in. Trim the radicchio and arrange the outer leaves on 4 plates as a bed. Cut the small leaves into fine strips and mix with the mozzarella and cucumber cubes, then divide them between the plates. Tip: Prosecco or a light white wine goes best with a mozzarella starter.
