Marinated Mushrooms Italian Way
The perfect marinated mushrooms italian way recipe with a picture and simple step-by-step instructions.
Preparation mushrooms:
- 700 g Fresh mushrooms
- 1 liter Water
- 1 Pc. Lemon fresh
- 1 Pc. Bay leaf
- 1 pinch Salt
Remaining ingredients:
- 1 Pc. Sweet red peppers fresh
- 1 Pc. Lemon fresh
- 100 ml Extra virgin olive oil
- 2 tbsp Balsamic vinegar
- Salt and pepper
- 2 Pc. Garlic fresh
- 1 tsp Italian seasoning mix
- 2 tbsp Italian herbs fresh or frozen
- This starter / salad is really delicious and can be served as a salad with grilled food or as a starter for a cold buffet. In addition, it can be made quickly and stored in the refrigerator and has a long shelf life. Well ….. then let’s start:
Preparation of mushrooms and peppers:
- Bring the water to a boil with the juice of a lemon and a little salt. Add the cleaned mushrooms whole and the bay leaf and cook for approx. 5 minutes. Then drain the mushrooms on a kitchen towel (Zewa) and pat dry well. Now cut the slightly cooled mushrooms into slices and place in a bowl.
- Halve the bell pepper, remove the stones and walls, wash and then dice very finely and also add to the bowl with the mushrooms.
Marinade:
- Mix together the olive oil, balsamic vinegar and the juice of one lemon. Season with salt, pepper, the Italian seasoning mixture and the Italian herbs as well as the garlic. Beat the marinade with a whisk.
- Pour the marinade over the mushroom / paprika mixture and let it steep for at least 2 hours in a cool place (NOT in the refrigerator). This starter / salad can be prepared a day in advance. Have fun copying and enjoy your meal!
