Marinated salmon, baked with tomatoes and mozzarella

Ingredients for 4 servings:

  • 4 salmon fillets
  • 1 lemon(s)
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 4 tomatoes
  • 400g mozzarella
  • 5 tbsp olive oil
  • basil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

For the marinade, squeeze the lemon juice and finely dice the garlic and onion. Mix with the olive oil to make a marinade, season with salt, pepper, and basil. Add the salmon to the marinade and let it stand for at least 30 minutes. Slice the tomatoes and mozzarella. Place the salmon in a baking dish and drizzle lightly with the marinade. Layer the tomatoes and mozzarella alternately, ensuring the fish is completely covered. Place the dish in the oven and bake at 200°C for about 20 minutes.
