Ingredients for 4 servings:

  • 250 g sugar
  • 250 ml water
  • 3 egg whites
  • 1 pinch of salt
  • 1 pinch(s) of tartar baking powder
  • n. B. flavoring, e.g. vanilla extract, rose water or cinnamon

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Bring the sugar and water to a boil and reduce to a syrup at 116°C (235°F) for about 10 minutes. Whisk the room-temperature egg whites with salt and cream of tartar until peaks form. Slowly stir in the syrup on low speed, then continue beating on medium speed for about 7 minutes. If desired, add flavorings at this point. This makes 1-2 jars of jam and will keep refrigerated for about 2 weeks.
