Marshmallow Fondant

Ingredients for 1 servings:

  • 1 kg powdered sugar
  • 450 g marshmallow(s), white
  • 3 tbsp water

First, put the marshmallows and water in a large bowl and microwave 3-4 times for 30 seconds each at 600 watts. Check occasionally, as some marshmallows hold their shape but when you touch them you can tell they’ve softened. Then mix in 500g of icing sugar. Then knead in the remaining 500g of icing sugar until a firm dough forms. Wrap the dough airtight in plastic wrap for storage. Take out the required amount for further processing and re-wrap the rest. Can be colored with food coloring. If the dough has become a little firm in the plastic wrap, simply put it in the microwave on the defrost program for a few seconds. If you don’t have a microwave, you can also melt the marshmallows over a double boiler.
