Martin's Hot Barbecue Sauce

Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • 1 small garlic clove(s)
  • 1 tbsp olive oil
  • 500 ml tomato(s), pureed
  • 1 tbsp honey
  • 1 tbsp sugar
  • 100 ml cucumber juice
  • 1 tbsp vinegar essence,
  • 1 tsp sea salt
  • 1 tsp coriander, ground
  • 2 tsp paprika powder, Hungarian, hot
  • 1 tsp black pepper, ground
  • 4 slice(s) ham, raw, for the smoky flavor

A well-seasoned, homemade tomato ketchup

I’m posting a recipe here today. I think you’ll already find one or two variations of this recipe, but it’s a hit at every party and can be served hot or cold. Chop the onions as finely as possible, and press the garlic, ideally through a garlic press. Sauté both ingredients in olive oil until translucent. Then deglaze the dish with the passata, a little at a time, and add the remaining seasonings, except for the vinegar! Add the ham in whole slices (removing any fat first, if possible). Simmer the whole thing on the lowest heat until the sauce has reduced to about 1/3. Season with a little more vinegar if desired, remove the ham slices, and our homemade barbecue sauce is ready to serve.
