Marzipan Hazelnut Mountain

Ingredients for 1 servings:

  • 4 eggs
  • 250 g sugar
  • 250 g margarine
  • 1 tbsp vanilla sugar
  • 1 tbsp baking powder
  • 500 g flour
  • 150 ml milk
  • 600 g whipped cream
  • 2 tbsp vanilla sugar
  • 200 g hazelnuts, ground
  • 2 marzipan covers

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours

The dough: Beat margarine, sugar, and vanilla sugar until fluffy. Stir in the eggs and milk. Gradually stir in the flour and baking powder. Divide the dough into two halves and fill one after the other into a ball-shaped mold and bake (I always use our metal mixing bowl). Bake for about 60 minutes at 180°C top and bottom heat. Don’t forget to do the skewer test, as not all molds are the same. Let cool. The filling: Beat the cream with the vanilla sugar until stiff. Briefly stir in the hazelnuts. It’s best to refrigerate it until you don’t need it. Now comes the difficult part: Cut a straight edge into one of the dough pieces and carefully hollow out the inside, being careful not to get too close to the edge, or it will fall apart. Turn it over and spread 1/3 of the filling on it. Roll out a marzipan base, place the coated side on top, and press the marzipan down. The hollowed-out side should now be on top. Spread the filling along the edges and then place the Smarties into the hollow. Place the second layer of dough on top and spread with the remaining filling. This is also great for filling any torn areas. Place the second marzipan layer on top and gently press down. Trim off any excess. Any other decorations are up to you.
