Marzipan mousse with spiced oranges

Ingredients for 8 servings:

  • 300 g marzipan
  • 2 eggs
  • 6 egg yolks
  • 10 tbsp Amaretto or other almond liqueur
  • 3 drops of bitter almond flavor
  • 500 g cream
  • 10 sheets of gelatin
  • 2 stalk(s) cinnamon
  • 4 cloves
  • 2 vanilla pods
  • 8 oranges
  • 2 tbsp sugar
  • 500 ml white wine

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the white wine to a boil with the cinnamon sticks, cloves, and vanilla pods, and season with sugar. Peel the oranges with a knife until no white pith is visible. Then segment them, mix them with the white wine marinade, and chill everything. For the marzipan mousse, soak the gelatin in cold water. Roughly chop the marzipan, place it in a bowl with the eggs, egg yolks, bitter almond oil, and almond liqueur, and beat it in a hot water bath with a whisk or hand mixer until creamy and thick. Dissolve the gelatin in the mixture and chill the mixture until it begins to set. Then fold in the whipped cream and let the mousse set. Serve the mousse with the spiced oranges.
