Mascarpone – Coffee – Cookies

Ingredients for 1 servings:

  • 120 g butter or margarine
  • ½ pkt. vanilla sugar
  • 160 g sugar
  • 60 g mascarpone
  • 1 egg(s)
  • 5 tsp coffee powder or cappuccino, instant
  • 200 g flour
  • 1 pinch of salt
  • ½ tsp baking soda
  • possibly coffee powder
  • possibly powdered sugar
  • possibly sugar (granulated sugar)

simple, quick cookies with a fine coffee aroma, makes about 35 pieces

Cream the butter/margarine with the sugar and vanilla sugar until fluffy, then stir in the mascarpone and egg. Then mix in the flour, salt, and baking soda. Place heaping heaps of cookies on a baking sheet using two teaspoons and bake in a preheated oven at 160°C (320°F) for about 10 to 12 minutes. Leave enough space between each cookie, as they will spread during baking. If desired, glaze with powdered sugar and sprinkle with sugar. Tip: The cookie dough (without the coffee powder) also works as a base for other flavors, such as lemon, vanilla, orange, cocoa, etc.
