Mascarpone cream with cantuccini

Ingredients for 8 servings:

  • 500 g peach(s), (in wedges) from the can
  • 100 g almond(s), chopped
  • 150 g sugar
  • Peach juice
  • 500 g mascarpone
  • 500 g quark (20%) or low-fat quark (as desired)
  • 250 g biscuits (cantuccini)
  • Vanilla pod(s) pulp

Instructions

Working time approx. 30 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 30 minutes

Melt 50g of sugar with the almonds in a pan. Let cool on a plate. Mix together the mascarpone, quark, remaining sugar, vanilla pulp, and 8 tbsp. of peach juice. Arrange half of the biscuits in a wide, tall bowl (2-3L capacity) and drizzle with 80ml of peach juice. Spread half of the mascarpone cream evenly over the biscuits. Layer the remaining biscuits on top and drizzle with 80ml of peach juice. Top with peaches (leaving a few for decoration). Finally, cover with the remaining mascarpone cream and chill overnight. Just before serving, sprinkle the chopped almonds over the cream. Garnish with the remaining peaches and lemon balm, if desired. Tastes delicious and is easy to prepare!
