Mascarpone cream with currants

Ingredients for 4 servings:

  • 500 g currants, red
  • 2 tbsp sugar
  • 250 g mascarpone
  • 250 g low-fat curd cheese
  • 125 ml milk
  • 2 tbsp sugar
  • 1 packet of vanilla sugar
  • 30 g almond flakes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and stem the currants, and toss them with 2-3 tablespoons of sugar. Let stand for about 30 minutes. Mix the mascarpone, low-fat quark, milk, 2-3 tablespoons of sugar, and vanilla sugar. Divide half of the mascarpone cream between 4 bowls, top with the currants, and finish with the remaining mascarpone cream. Garnish with the lightly toasted almond flakes.
