Mashed potatoes with bacon and eggs

Ingredients for 4 servings:

  • 100 g bacon, streaky, smoked
  • 100 g cheese (Gouda)
  • 100 g onion(s)
  • 4 servings of mashed potatoes, ready prepared
  • 4 eggs
  • 1 bunch of parsley
  • pepper
  • nutmeg
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Dice the bacon, cheese, and onions. Fry the bacon in a hot pan until crispy, then add the onions and fry until golden brown. Set half of the bacon aside. Season the mashed potatoes with pepper and nutmeg. Stir the remaining bacon and onion cubes into the mashed potatoes. Dice the cheese and stir it into the mashed potatoes. Transfer everything to a greased baking dish. Make four indentations and crack an egg into each. Bake in a preheated oven (top/bottom heat: 200°C, gas mark 3) for 15-20 minutes. Chop the parsley and sprinkle it over the mashed potatoes along with the remaining bacon and onion mixture.
