Mashed potatoes with soy schnitzel and spinach with "Blubb"

Ingredients for 4 servings:

  • 4 schnitzels, vegan
  • 800 g leaf spinach, frozen
  • 2 cups soy cream (Soy Cream Cuisine)
  • 600 g potatoes
  • 4 carrots, if you like mashed potatoes with carrots
  • salt and pepper
  • nutmeg
  • Oil for frying

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Thaw the spinach. Peel the potatoes and carrots, and cook until tender (usually about 20 minutes). Meanwhile, microwave the spinach for about 4 minutes at 600W, stirring after 2 minutes. Season with a cup of soy cream, salt, pepper, and nutmeg. Fry the soy schnitzel in a pan with a little oil until golden brown. Drain the potatoes and carrots, mash, add the soy cream, and season with salt, pepper, and nutmeg. Serve everything together.
