Ingredients for 4 servings:
- 4 schnitzels, vegan
- 800 g leaf spinach, frozen
- 2 cups soy cream (Soy Cream Cuisine)
- 600 g potatoes
- 4 carrots, if you like mashed potatoes with carrots
- salt and pepper
- nutmeg
- Oil for frying

Thaw the spinach. Peel the potatoes and carrots, and cook until tender (usually about 20 minutes). Meanwhile, microwave the spinach for about 4 minutes at 600W, stirring after 2 minutes. Season with a cup of soy cream, salt, pepper, and nutmeg. Fry the soy schnitzel in a pan with a little oil until golden brown. Drain the potatoes and carrots, mash, add the soy cream, and season with salt, pepper, and nutmeg. Serve everything together.
