Matcha Ice Cream with Caramelized Peanuts

- 300 g Sugar
- 300 g Roasted and salted peanuts
- 30 g Butter
Matcha ice cream
- 200 ml Milk
- 150 g Sugar
- 200 ml Cream
- 10 g Matcha tea
- 1 piece Vanilla pod
- 250 ml Raspberry sauce
- 100 g Fresh raspberries

- For the peanuts, mix 300 g sugar in a saucepan and turn into caramel, then add butter. When everything is completely liquid, add the peanuts, stir quickly and spread out on baking paper. Let cool and beat into small crumbs in a bag.
Matcha ice cream
- For the matcha ice cream, whisk the milk with the sugar and cream, the matcha powder and the pulp of a vanilla pod, then put in an ice cream maker and stir into ice as instructed.
- Arrange the raspberry sauce on a plate as a mirror, then place the green ice cream on top as a ball. Garnish with the caramelized peanuts and raspberries.
