Ingredients for 1 servings:
- 150 g flour
- 100 g sugar
- 70 ml oil
- 50 g marzipan paste
- 10 g matcha powder
- 1 packet of baking powder
- possibly almond milk (almond drink), soy milk or oat milk, if required

When you need something quick: healthy vegan cookies, perfect for coffee, brunch or a party
Mix the matcha powder with the flour and baking powder. In another bowl, mix the sugar, oil, and marzipan thoroughly, then add the matcha flour mixture. If desired, add a little almond milk or other plant-based milk. Using a teaspoon, place small portions onto a baking sheet, leaving enough space. Bake at 180°C (top/bottom heat) for about 20-25 minutes. Depending on the size of the cookies, you’ll get about 2 baking sheets or about 30 cookies. Tips: Marzipan, sugar, and oil can be easily blended in a stand mixer if you want to avoid marzipan flakes. If you don’t have matcha on hand (or it’s too expensive), you can easily make the powder yourself by “pushing” green tea from tea bags through a stand mixer. The cookies also taste great coated in white chocolate. The calories listed are for 30 cookies.
