Ingredients for 1 servings:

  • 6 tsp, heaped tea, (mate), loose (1 tsp speaks about 2g)
  • 1 liter of boiling water
  • 2 m.-sized lemon(s), juice of which
  • e.g. raw cane sugar or white stevia powder
  • 1 ½ liters of carbonated mineral water (cold)

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 20 minutes

Homemade lemonade made from mate tea with a delicate, bitter taste

Brew the mate tea with 1 liter of boiling water and let it steep for 10 minutes. Strain and let the tea cool. Squeeze the lemons and add the juice to the tea. Sweeten the tea to taste. I use 1 level teaspoon of white stevia powder. If you prefer a more traditional sweetener, you can use this method: A well-known commercially available mate tea-based soda contains 5g of sugar per 100ml. That would be 125g for a 2.5L soda. Chill the finished mate tea concentrate and pour over 1.5L of cold mineral water. If you don’t want to drink the 2.5L soda all at once, it’s better to dilute the soda by the glass (e.g., 100ml mate tea concentrate + 150ml mineral water).
