Matjes bites with cranberry cream

Ingredients for 4 servings:

  • 125 g matjes fillet(s)
  • 1 m.-sized onion(s)
  • 3 tsp mustard, medium hot
  • 2 tsp white balsamic vinegar
  • 1 tbsp dill tips, finely chopped
  • 3 tbsp sour cream, alternatively crème fraîche
  • 2 tbsp jam, cranberry
  • 2 pretzel sticks

Working time approx. 20 minutes; Total time approx. 20 minutes

Rinse the herring in cold water and pat dry. Cut the fillets crosswise into approximately 1 cm thick strips. Peel and finely dice the onion. Wash the dill, spin dry, and finely chop. Mix the mustard with the balsamic vinegar and the dill. Fold in the herring strips. Mix the sour cream with the cranberry jam. Cut the pretzel sticks diagonally into thick slices. Arrange the herring on top and garnish with a dollop of cranberry sour cream.
