Ingredients for 4 servings:
- 500 g matjes fillet(s) in oil
- 5 m.-large tomato(s)
- 2 m.-sized onion(s)
- 8 gherkins
- 14 tbsp balsamic vinegar
- 2 tbsp oil
- 3 tbsp, heaped dill
- 1 pinch(s) salt
- 2 pinches of pepper

Cut the herring fillets, tomatoes, and cucumber into small pieces. Dice the onion and mix everything together well. Add a generous splash of balsamic vinegar and oil to the salad. Season with pepper, salt, and dill. Cover and let the salad sit in the refrigerator for at least an hour. I called the salad “à la Papa” because my late father always made it exactly like this. My brother and I always enjoyed the salad so much that my dad always had to make several servings so we could take some home with us.
