Matjes salad without mayonnaise

Ingredients for 4 servings:

  • 4 m.-sized matjes fillet(s), fresh from the market
  • 65 g apple, sour
  • 3 m.-sized tomatoes, approx. 50 – 60 g each
  • 3 medium-sized eggs, hard-boiled, diced
  • 65 g gherkins, finely diced, 3 pieces
  • 65 g pearl onion(s), finely diced
  • 1 tbsp, heaped dill
  • 1 tbsp, heaped parsley
  • 1 tbsp stalked celery leaves
  • ½ tsp white pepper
  • 40 ml oil, e.g. linseed oil, alternatively olive oil
  • possibly salt

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

a classic summer salad

Wash the apple and tomatoes, remove the peel and core, and finely dice. Place them in a bowl with the diced herring fillets, hard-boiled eggs, gherkins, and pearl onions. Wash the leaves, pat them dry, remove and discard the stems. Finely chop everything and add to the other ingredients. Mix the oil with the pepper. Pour the mixture into the bowl and fold in with two kitchen spoons. Let the salad rest for about 30 minutes so the flavors of the ingredients can distribute evenly. After seasoning with salt, if desired, the salad is ready to serve and can be served with boiled potatoes or warm baguette.
