Ingredients for 1 servings:
- 50 g chili pepper(s) approx. (2 red, 1 yellow)
- 100 g onion(s)
- 2 garlic cloves
- 60 g butter
- 50 g raisins
- 20 g brown sugar (can be used without)
- 30 g honey
- 2 tbsp balsamic vinegar
- 1 tbsp soy sauce
- 200 ml tomatoes, pureed
- 9 g salt

Finely chop the chilies, onions, and garlic, then sauté in butter. Add the remaining ingredients and cook for 20 minutes with the lid slightly ajar. Stir occasionally. Blend the sauce while it’s still hot with an immersion blender and season to taste. Since the chilies can vary in spiciness, thin the mixture with raisins, balsamic vinegar, and passata if desired. Once the sauce has cooled, it will become slightly milder. Pour the sauce into jars while it’s still hot and seal tightly. It will keep for several months if stored in a cool, dark place (e.g., in the cellar).
