Whisk the milk with a hand blender while slowly adding the oil. The liquid will emulsify after about 90 seconds. Then quickly add the remaining oil and mix. Season with salt, pepper, and lemon juice. The emulsion in mayonnaise, which is usually created by the lecithin in the egg yolk, can also be created using milk. It is important to have a hand blender. The emulsion created using milk requires high speed when mixing the milk and oil.
