Ingredients for 1 servings:

  • 2 egg yolks
  • ½ liter of oil
  • 1 tsp lemon juice
  • ½ tsp salt
  • 1 pinch of white pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Basic recipe

Whisk the egg yolks in a bowl until light and creamy. While whisking constantly, slowly add the oil, first drop by drop, then in a thin stream. Continue whisking continuously to prevent the mayonnaise from curdling. When it is thick and creamy, season with salt, pepper, and lemon juice. Caution! Mayonnaise has a short shelf life, especially in warmer weather. Homemade mayonnaise should only be refrigerated for 2-3 days.
