Mayonnaise with olive oil – that works

- Olive oil can be mild, fruity or tart, or sometimes taste like herbs. The tart version is not suitable for making mayonnaise. This would make the mayo taste bitter.
- So when choosing the olive oil for the mayonnaise, make sure that it is a mild variety.
- If you only have tart olive oil at home, it is best to prepare your mayonnaise with neutral oil. At the very end, add just a dash of your olive oil for that special taste.
