McMoe's Oven Macaroni

Ingredients for 4 servings:

  • 400 g macaroni, short
  • 150 g mushrooms, brown
  • 1 onion(s)
  • 1 small garlic clove(s)
  • 100 g cooked ham
  • 1 bunch of chives
  • 1 tbsp butter
  • 150 g crème fraîche
  • some tomato paste, approx. 1 – 2 tbsp
  • 50 g Parmesan, freshly grated
  • some whipped cream, approx. 4 – 6 tbsp
  • e.g. tomatoes, pureed
  • e.g. milk
  • some salt and pepper, colored or black, from the mill
  • some oregano
  • Olive oil for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 225°C. Cook the macaroni in lightly salted water until al dente. Clean and finely chop the mushrooms. Peel the onion and garlic clove, finely dice the onion, and finely chop the garlic clove. Dice the cooked ham. Rinse the chives, shake dry, and finely chop. Melt the butter in a pan and fry the finely chopped mushrooms with the diced onion and chopped garlic for about 5 minutes, stirring occasionally. Season with a little salt, a few turns of mixed or black pepper from the mill, and a little oregano. Drain the macaroni, let it drain, and toss it with the diced ham, chives, and mushrooms in a baking dish greased with a little olive oil. Mix the crème fraîche with a little tomato paste, freshly grated Parmesan cheese, and the cream. The sauce should be neither too thick nor too thin; if desired, stir in some pureed tomatoes and/or milk. Season to taste with salt and a few grinds of mixed or black pepper, then pour over the pasta mixture. Bake the casserole in the preheated oven for about 15 minutes.
