Meat sausage patties with potato salad

Ingredients for 4 servings:

  • 700 g jacket potatoes (from the previous day)
  • 1 medium-sized onion(s), diced
  • 2 gherkins, diced
  • some vinegar
  • salt and pepper
  • 2 tbsp parsley, chopped
  • 3 tomatoes, pitted, diced
  • 100 g mayonnaise
  • 1 egg(s)
  • 400 g meat sausage
  • some breadcrumbs
  • some butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the potatoes, add the cucumbers, onion, and tomatoes. Mix the mayonnaise with vinegar, salt, and pepper, pour over the potatoes, and mix. Let it marinate. Slice the sausage. Beat the egg. Dip the sausage slices first in the egg, then in the breadcrumbs. Heat the butter and fry the sausage slices. Sprinkle the parsley over the potato salad before serving.
