Meatball salad with vegetables

Ingredients for 4 servings:

  • 300 g minced meat, mixed or only pork
  • 150 g onion(s)
  • 2 garlic cloves
  • 1 egg(s)
  • 1 pack of mixed herbs
  • 2 tbsp oil
  • 1 cauliflower
  • 1 can peas
  • 250 g tomatoes
  • 150 g mayonnaise
  • 150 g yogurt (low-fat yogurt)
  • 1 tsp mustard, medium hot
  • 1 bunch of chives
  • Sugar
  • salt and pepper

Season the minced meat with onions, garlic, egg, mixed herbs, salt, and pepper, and form into small balls. Brown the balls in batches in a pan, turning them all over. Trim the cauliflower and cook in boiling salted water until al dente. Drain the peas. Wash and chop the tomatoes. Place the meatballs and vegetables in a bowl. Make the salad dressing from mayonnaise, low-fat yogurt, mustard, and chives, and season to taste. Pour over the salad and let it marinate well—preferably overnight. A beautiful, fresh salad, ideal for parties and barbecues.
