Meatballs in Tomato Sauce with Rice

Ingredients
 

  • 500 g Ground beef
  • 4 tbsp Ajvar
  • 2 tbsp Rapeseed oil
  • 500 g Strained tomatoes
  • 2 Red onions
  • 150 g Feta cheese
  • 250 g Rice
  • Salt and pepper
  • 4 Stems Basil

Instructions
 

  • Knead the minced meat with 2 tablespoons of ajvar, salt and pepper and shape into walnut-sized balls with damp hands.
  • Heat the rapeseed oil in a pan and fry the meatballs for 8-10 minutes. Remove from the pan, peel the onions and cut into fine strips. Sauté in the frying fat of the meatballs. Add tomatoes (strained) and remaining ajvar (2 tablespoons) and simmer for 10 minutes.
  • Preheat the oven grill. Season the tomato sauce with salt and pepper. Heat the meatballs in the sauce. Put them in a baking dish and sprinkle with the crumbled feta cheese. Briefly bake under the grill.
  • Meanwhile, cook rice in salted water according to the instructions on the packet. I prepared the rice in the rice cooker. Arrange rice and gratinated meatballs on plates and serve garnished with basil leaves.
