Tomato Rice with Meatballs and Crème Fraîche

Ingredients
 

  • Mettballs:
  • 500 g Minced meat
  • 1 Diced onion
  • 1 Egg
  • 1 tsp Mustard
  • 1 tsp Tomato ketchup
  • 1 tsp Salt
  • 1 tsp Sweet paprika
  • 2 tsp Herbs
  • 0,5 tsp Pepper
  • 3 tbsp Breadcrumbs
  • Oil for frying
  • Tomato rice:
  • 1 Diced onion
  • 3 tbsp Tomato paste
  • 300 g Rice
  • 1 can Tomatoes, chunky 400 g
  • 750 ml Vegetable broth
  • Salt, pepper, paprika,
  • Garlic, herbs, 1 pr sugar
  • Possibly crème fraîche with herbs

Instructions
 

  • Without meatballs, it is a delicious side dish for grilling.
  • For the meatballs, put all the ingredients in a bowl and mix together. Shape the mass into balls, size as everyone likes. Fry the balls in the hot oil on all sides. Remove from the fat and drain on kitchen paper.
  • Pour the frying oil into a saucepan and fry the onions until translucent. Add the rice and fry briefly. Briefly sweat the tomato paste and deglaze with the tomatoes and vegetable stock.
  • Season to your own taste and simmer the rice over medium heat. Keep stirring, otherwise it will burn. If the rice is still too firm after the liquid has simmered, add water and simmer until the rice is cooked.
  • Finally add the meatballs and pour a dollop of crème fraîche with herbs on top.
