Meatballs with spring onion sauce

Ingredients for 4 servings:

  • 1 roll
  • 1 onion(s), red
  • 1 garlic clove(s)
  • 50 g smoked bacon
  • 375 g minced pork
  • 1 egg(s)
  • Parsley and chives, chopped
  • 2 tbsp herb butter
  • Salt and pepper, paprika powder
  • ½ bunch of spring onions
  • 200 g cherry tomatoes
  • 1 tbsp butter
  • 2 tbsp tomato paste
  • 100 ml white wine
  • 100 ml cream

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Soak the bread rolls in water. Peel and chop the onions and garlic. Dice the bacon. Squeeze out the excess liquid from the bread rolls and knead them with the minced meat, egg, and herbs. Sauté the onions and garlic in 1 teaspoon of herb butter. Add the bacon, fry, and then add it to the minced meat. Season with salt, pepper, and paprika. Knead everything together and form meatballs. Fry in the remaining herb butter. For the sauce, wash, trim, and slice the spring onions and tomatoes. Sauté both in the butter. Stir in the tomato paste, wine, and cream and simmer. Season with salt and pepper. Serve with potatoes and a green salad.
